Classique - Red
The Classique red reveals an array of crimson tones tinted with ruby. This beautifully fresh and delicate wine exudes ripe red fruit on both the nose and palate. It is vinous and meaty with oaky notes and a mineral finish. Enjoy served at 12 to 15°C paired with red meats.
Hand-harvested, sorted, de-stemmed. Fermentation of about 10 days with punching down, spontaneous fermentation with indigenous yeasts in thermo-regulated inox tanks, maturation and malolactic fermentation in 3 to 5 years old barrels.
The cuvée Tradition offers a remarkable expression of Pinot Noir from Menetou-Salon. It coats the palate with its velvety texture and notes of red fruit and vanilla underpinned by a pleasant touch of acidity. The tannins are delicate and complemented by an intense minerality.
The Tradition Red truly comes into its own after a few years of ageing and can be kept for five to ten years in the cellar. The perfect partner for red meats.
Hand-harvested, whole-bunch fermentation with punch down over 15 to 20 days, spontaneous fermentation with indigenous yeasts in thermo-regulated inox tanks, malolactic fermentation and maturation (one year) in oak barrels (1/3 new, renewed each year). Bottled in the Autumn.
