Vinification

Hand harvested Fermentation and maceration of about 10 days with punching down, spontaneous fermentation with indigenous yeast, aging, and malolactic fermentation in oak barrels aged 3 to 5 years.

This wine is all about finesse, its aromas of raspberry and vanilla combine to make a great Pinot Noir. Serve after several years of cellar ageing with meat and game.

It can be kept for 5 to 10 years.

Vinification

Hand-harvested, whole-cluster fermentation with punch-downs for 15 to 20 days, spontaneous fermentations with indigenous yeast, malolactic fermentation, and aging (one year) in oak barrels (1/3 new barrels renewed each year). Bottled in the Autumn.

Clos des Treilles

Tasting notes

This cuvée has a great concentration. Le Clos des Treilles Rouge stands out for its black fruit notes, typical of a sunny Pinot Noir vintage. The aromas of sour cherry and blackberry are therefore intense. The two-year aging highlights the delicacy of the tannins.

Situation

This historical parcel of the estate is owned by the family since many generations. It is located on one of the most beautiful slopes of the appellation. Located on a high point of the village of Parassy, the Clos des Treilles vines are planted on clay-limestone marl. South exposure.

Vinification

Manual harvest, 24-day fermentation. Fermented with indigenous yeasts. Aging lasts 24 months and is entirely carried out in 228-liter Burgundy barrels. Only 10 barrels make up Le Clos des Treilles.
