Tasting notes

The “caillottes” terroir imparts a subtle complexity to this wine, while the persistent finish provides a superb length on the palate.

A white Sancerre that embodies the mineral essence of its terroir with finesse and balance.

Vinification

The grapes are received via gravity, sorted, then the whole-berries are pneumatically pressed. Cold stabilisation, indigenous yeasts to ensure a spontaneous fermentation in thermo-regulated inox tanks, maturation on the fine lees, then bottled from spring onwards.

The choice of non-interventionist winemaking allows us to reveal the authenticity and elegance of the terroir.

Tasting notes

Thanks to its sun-kissed terroir, this single- vineyard wine offers a broad and generous palate with honeyed and yellow fruit aromas. The caillottes soil brings remarkable freshness and vibrant tension, achieving perfect balance.

Vinification

Direct pressing and fermentation withindigenous yeasts. Vinification in stainless steel tank to preserve aromatic purity and terroir expression. Aged on fine lees for 18 months in stainless steel tank. Number of bottles produced : 3,000 bottles.
